The griffin is a solid third-tier unit, possessed of decent attack and defense, and a good amount of hit points, but is expensive, having same gold cost as ogres and cavalries, which are of higher tier.
They also have the ability to counter-attack an unlimited number of melee attacks. This ability is useful when pitted against many foes, particularly if the troop is blessed, but care should still be taken to avoid letting the griffin be surrounded.
